  • 嫩姜 （500克）
  • 老冰糖 （250克）
  • 醋 （300克）
  • 盐 （10克）

STEP1、市场上买这种嫩姜，老姜非常辛辣嚼起来都是渣，尽量用这种

藕的下饭做法生焖藕片

今天做的这道菜，基本上参照广东生嗜菜的做法。啫的意思就是干烘，砂锅里不加一滴的水，就靠肉类或蔬菜与蒜、小洋葱等自身的水分在火上干烘。肉或疏菜都要事先用生嗜酱腌好。生啫菜用的砂锅是陶制的，它受热均匀。有许多气孔，吸水性好。所以做出的菜有干香的感觉。生嗜菜开盖儿前还有一道重要的工序，就是在砂锅盖上浇上酒点着。我在家做，一切从简了。就是用家里有的酱料简单腌制一下。用的砂锅也不是真正的砂锅，我用的瓷制砂锅。瓷锅耐用，但是吸水性差很多，所以，就不太容易把菜烧出干香的味道来。这也是我这道菜不能叫生嗜的原因。尽管不太正糖醋姜一直是我的心头好，可以用糖醋也可以用酒糟腌制，刚好市场上有嫩姜，买了一些自己做，一周就可以吃。因为胃寒，一不注意饮食胃就难受，拿几块撕一下加点糖醋，几片下腹暖暖的，迅速缓解不适，大爱呀
