  • 嫩姜 （500克）
  • 老冰糖 （250克）
  • 醋 （300克）

STEP1、市场上买这种嫩姜，老姜非常辛辣嚼起来都是渣，尽量用这种

鲜笋炒回锅肉

这个鲜笋是跟前面的南瓜尖菜谱一样，都是在山里的菜市场买的。还有回锅肉里的青椒也是。我想说说青椒，小时候菜市场卖的青椒，皮薄，有辣味，要认真挑选才能选出不太辣的青椒。我家胖外婆选青椒真的很棒，我爱吃青椒就是因为她挑选的青椒好吃又只带一点点辣味。可惜的是如今的青椒，基本上就是不辣，我指的是普通青椒，不包括小尖椒二荆条这类的哈，杠精止步。这次在山里看到青椒，很像小时候吃过的品种，立马买了一斤，回家就做了回锅肉，真的是小时候的味道，一点点辣，有青椒独特的味道。糖醋姜一直是我的心头好，可以用糖醋也可以用酒糟腌制，刚好市场上有嫩姜，买了一些自己做，一周就可以吃。因为胃寒，一不注意饮食胃就难受，拿几块撕一下加点糖醋，几片下腹暖暖的，迅速缓解不适，大爱呀

红烧土鸡

1、加入陈醋是为了帮助去腥，长时间的翻炒和炖煮会使得陈醋完全挥发，鸡块不会因此变酸。2、加开水炖鸡块之前，先将原先焯鸡块时带来的水分炒干，这是鸡块好吃的关键之一。3、花椒粒不要在二次撇去血沫子之前放入，不然在撇血沫子时浮在表面的花椒粒会有一部分被捞出去。4、土鸡不同于肉鸡，需要比较长的炖煮时间。糖醋姜一直是我的心头好，可以用糖醋也可以用酒糟腌制，刚好市场上有嫩姜，买了一些自己做，一周就可以吃。因为胃寒，一不注意饮食胃就难受，拿几块撕一下加点糖醋，几片下腹暖暖的，迅速缓解不适，大爱呀
