  • 里脊 （半条）
  • 淀粉 （120克）
  • 鸡蛋 （1个）
  • 白糖 （1大勺）
  • 姜 （2片）
  • 蒜 （1瓣）
  • 葱 （10克）
  • 盐 （半勺）
  • 鸡精 （少许）
  • 食醋 （1勺）
  • 植物油 （适量）
  • 水 （适量）
  • 浓缩橙汁 （少许）

STEP1、准备好各种材料。家里没有大葱啦，我就用的小葱。

STEP2、将猪里脊表面的筋膜撕掉，顶刀切成3毫米厚的大片。葱姜切丝，蒜切片备用。

STEP3、把玉米淀粉、少许水、盐、鸡精、鸡蛋和里脊肉倒入大碗中，用手抓匀，使肉的表面裹着薄薄一层浆，腌制一会儿再炸。这样肉质不容易散失水分，更嫩也更入味。

STEP4、铁锅中倒入适量植物油，烧到五成热，把肉片一片片摊平，放入油锅中炸。

STEP5、先用五成热的油，把肉片炸到金黄色，捞出沥净多余的油。

STEP6、再把锅中的油继续烧热到七成，把肉片倒入锅中复炸。

STEP7、把肉的表面炸硬，内里炸透，捞出备用。复炸一次很重要，必须把表面炸硬，这样最后回锅勾糖醋汁的时候，表面酥脆，不容易泡软，口感更好。

STEP8、称出适量的白糖用来调糖醋汁。糖和醋的比例一般是1：1，糖也可以稍微比醋多一些，因为后面还要用微酸的橙汁提色提香。

STEP9、将白糖、食醋、少许浓缩橙汁和少许水调匀。

STEP10、倒入锅中，小火加热到白糖完全融化，汤汁粘稠起泡的状态，加入蒜片、葱姜丝炒匀。

STEP11、倒入炸好的肉片，快速翻匀，让汁液均匀地包裹在肉片上，盛出即可。我用的是调糖醋汁的方法，也有的做法会用番茄酱来调糖醋汁，或者最后再勾一次芡，这就看个人口味不同了。作为东北人，我更喜欢我们传统方法做出来的口味。

菊皇茶

这是一款很适合夏天喝的清润养声茶。菊花我是用的杭白菊。如果家里有糖桂花的话，代替冰糖，效果很好~~菊皇茶是由菊花、枸杞子、莲子心、甘草、橘皮、胖大海、冰糖制成的。那么菊皇茶有什么功效呢　　1.散风清热，平肝明目。用于风热感冒，头痛眩晕，目赤肿痛，眼目昏花。有镇静、解热作用。　　2.对金黄色葡萄球菌、乙型链球菌、痢疾杆菌、伤寒杆菌、副伤寒杆菌、大肠杆菌、绿脓杆菌、人型结核菌及流感病毒均有抑制作用。　　3.能明显扩张冠状动脉，并增加血流量。　　4.可增强毛细血管抵抗力。菊甙有降压作用。　　5.用于感冒风热，说起好吃菜，不能不提到很多下馆子必道“硬菜”——锅包肉。硬菜、实惠、能镇得住台面大块肉菜叫法，不管家宴聚餐，必几道C位“场面菜”才行，锅包肉。锅包肉“锅爆肉”，用猪身上最嫩里脊肉制成，成菜外酥里嫩，颜色金黄，酸甜可口，老幼皆宜。口咬下去，最先感受到舌尖接触酸甜，之后牙齿碰触酥脆表面“咔嚓”声，最后才嫩里脊肉，每口咀嚼起来都混合着酥、脆、嫩、酸、甜，甜，非常开胃。它最早从哈尔滨开始流行，后来发展到全国各地都不同做法，在里给大家介绍下在比较传统做法。
